Salvador Furio, Chef de Cuisine at A Tu Gusto with several years of experience at Michelin starred establishments, decided to go solo in his new venture in Valencia in an attempt to serve comfort food to locals and tourists alike. So at lunch you could help yourself to a large buffet in addition to salads and pasta, while at dinner Salvador is all set to delight guests with some fusion cooking where quality of the ingredients and sourcing is taken seriously.

To lighten things a bit, the décor is in shades of pistachio green, and large windows through which you can watch life go by in this bustling town. Don't be surprised to see cockles with eggs and tomato; grilled foie gras with passion fruit and caramelised figs; scallops with roasted beet vinaigrette and Chinese noodles, or lobster gazpacho and strawberries perfumed with basil - the cooking has its moments of innovation - so does a dessert of foam yogurt with red fruit and liquorice.
