Bridge Restaurant, The

The Vermont Hotel has been described as a Manhattan tower, but however it is viewed the views from it are spectacular in terms of urban landscape. Inside the décor is restrained in a modern kind of way with blue a predominant the colour. The quality of the food, both in terms of preparation and sound ingredients, is high, and a meal could start with confit salmon with light summer vegetables in a truffle dressing, followed by a handsome fillet of Angus beef surmounted by foie gras in a red wine sauce with fondant potato, sweet shallots and girolle mushrooms. The wine list is some 200 strong with a good balance between French and the rest of the world, starting at £17. Service is formal and can be a touch slow at times but since the whole ambience is restful and the food excellent, why hurry?
