Chef Dominic de Franco has an impressive culinary pedigree with stints in several Michelin starred kitchens and a high grading at the AA Rosette Academy, so it comes as no surprise that he puts his soul into the cooking and results are for all to see. Chicken liver crème brûlée with spiced pear sorbet and toasted baguette, pan-seared black bream with pepperonata tart and fennel puree, and warm chocolate fondant with Earl Grey tea ice cream and espresso parfait are amongst them.
