Head chef Matthew Foxon has created a range of dishes using the finest and freshest ingredients from around the country. Dinner could get started with home smoked salmon, eel and horseradish mousse, pan fried scallops with vanilla purée or beef fillet carpaccio with mini Yorkshire pudding. Delight the taste buds further with English rose veal loin, parsnip puree and red cabbage, Gloucester old spot pork loin and belly with crackling and black pudding and wild halibut with winter vegetables and pickled fennel. Desserts of Malva pudding with mulled wine poached pear, ginger crème brûlée and opera cake with white chocolate fondant and salty caramel ice cream are but icing on the cake. A classic white or red wine complements the cuisine perfectly while a pre-dinner cocktail at the celebrated Long Bar adds to the celebration.
