DB Wine Bar Description
Welcome to the stylish underground DB Wine Bar in Marylebone High Street. This wine and champagne bar offers authentic Caribbean cuisine, and prides itself on its fantastic cocktails and extensive list of ales and wines.
Interestingly, Caribbean cuisine is a fusion of African, Amerindian, French, Indian and Spanish cuisine. South America introduced its native potatoes and passion fruit into the Caribbeans, while Mexico added papaya, avocado, chayote and cocoa.
Not surprisingly, seafood forms the basis of a lot of the cuisine, yet each island in the Caribbean's boasts of its own specialities. Trinidad and Tobago are known for their cascadura while Barbados specialises in flying fish.
Caribbeans are credited with first learning how to spice their meat. In fact, this has given rise to an usual method called jerking, which is marinating poultry, meat or fish with powdered all spice and scotch bonnet pepper before cooking it. You could tuck into a starter of peppered crevettes, jerk chicken or a steamed whole sea bass, served with okra in white wine and coconut rundown.
Another Caribbean mainstay is rice, in numerous forms - the seasoned rice, yellow rice and sometimes with a dash of coconut. Follow this with dip and fall back, Jamaica's classic dish of ackee and salt fish cooked in onions, tomato, spring onion and scotch bonnet pepper served over basmati rice. You could try the brown stew chicken, succulent piece of chicken slowly cooked and served with basmati rice or rice and peas. Vegetarians revel in native son, a medley of colourful vegetable cooked in a rich tomato and fresh basil sauce.
Columbus may have never imagined the sugar cane he introduced could so creatively be used to make rum, not just a favourite drink, but also a base for desserts. Try the homemade rum cake served with cream or custard or the banana fritters for dessert.
