Elliot's Restaurant at the Apex Waterloo Place Hotel combines traditional architectural features with contemporary interior design. Guests can relax and unwind in an impressive dining room with an ornate corniced ceiling, original fireplaces and expansive Georgian windows. A modern British and Scottish menu offers an array of specialities for lunch and dinner as well as afternoon tea.
Created with locally sourced seasonal ingredients, a meal at the Elliot could begin with homemade haggis with neep purée and whisky foam, confit duck with foie gras terrine and home smoked monkfish tail with mussels and squid. Then, progress to options such as Scottish sirloin steak with sautéed mushrooms, guinea fowl supreme with roasted red pepper corn polenta and caramelised pork fillet with Yukon Gold potatoes. For dessert, consider steamed banana pudding with cinnamon ice cream or plum soufflé with caramel ice cream. Finally, if you wish, end the meal with coffee and handmade chocolates. An extensive wine list, embellished with such vintage as Marlborough Sauvignon Blanc, Gran Reserva Chardonnay, Santa Rosa Shiraz Malbec and Nostros Pinot Noir, adds to the pleasure.
