The carte is well divided and is particularly helpful for Indian cuisine novices; here kormas, tikka masalas and pasandas are for those with a delicate palate, but those who can handle the spice could try jalfrezis, Madras and the daring vindaloos.

Overlooking the waterfront and just a stone's throw from the shopping, culture and renowned restaurants of Waterford City Centre, Dooley's Hotel is situated in the heart of this historic city. The New Ship Restaurant of the hotel is an engagingly contemporary place and the comfortable banquette seating blends with exposed stonework to create a smart yet relaxing mood in the dining area.

A menu of wholesome brasserie cooking features dishes from around the world. It may include the likes of chicken liver pâté served with toasted brioche and a crisp garden salad or warm chicken and bacon salad tossed with crisp herb croutons and mixed dressed leaves. Other plausible options are stuffed pork fillet, grilled sea bass, and ravioli with gorgonzola cheese and walnut.
