Foxhunter, The Description
The tiny, picturesque village of Nantyderry near Usk has been given a rare treat with the arrival of top chef, Matt Tebbutt. Returning to his homeland after eight years in London, Matt has transformed an old stationmaster's house and former pub into one of Wales' most exciting new restaurants. He brings with him a wealth of experience, having trained with many of the UK's leading chefs, from Marco Pierre White, to Alistair Little and Sally Clarke.
The Foxhunter has been completely refurbished by Matt and his wife Lisa. The couple have turned the old, Victorian pub into a stunning mix of original features and contemporary comfort. The informal setting combines Welsh flagstone floors and log-burning stoves with handmade furniture and crisp linen napkins. Clearly drawing on the influences of his celebrated mentors, Matt offers the very best of Modern British cooking, characterised by daily changing menus featuring local, organic ingredients and recipes which remain true to the flavours of fresh, seasonal ingredients.
A typical menu might include the following dishes: taglioline with wild duck sauce and aged pecorino cheese or mixed seafood bourride, rouille and crouton to begin with; then roasted and braised mallard, choucroute, juniper and buttered pears or wild sea bass, salsify, shrimps and chive beurre blanc. Finishing with chocolate and pomegranate tart, crème fraiche or a selection of British cheeses with homemade fig salami and toast.

A foodie (2 July 2008)
I have been to the Foxhunter several times and never had a bad meal. The ribeye is always excellent, cooked to perfection and big enough for two. I am sure that Matt is not always there when we have eaten, but whoever the chef is, is talented and does Matt proud. I will certainly be eating there again. The front of house team are also excellent and very welcoming. This is a very nice place at lunchtime or in the evening.

Are you sure you were at The Foxhunter? I always get great service and have never seen any teenagers working there on a weekday. Their longhorn rib-eye is the best you'll eat for miles around.
PS: It’s the fat that gives rib-eye its wonderful flavour.
