Gabbro Bistro Description
Just a stone's throw away from Holyrood Park and the Commonwealth Swimming Pool, Gabbro can be found tucked away within the boutique Salisbury Hotel, on the garden level with direct access to the beautiful walled gardens and outside dining area. Speaking of gabbro you might recall the rugged, dark, abrasive rock from which much of the Isle of Skye is formed. Nothing could be less true of this gem within a casket, and as a place in which to take refuge from some of the less admirable vagaries of life in busy, everyday Edinburgh, it could hardly be bettered.
The kitchen team at Gabbro uses fresh Scottish ingredients to create dazzling dishes and when the evening creeps in you'll find yourself engaged with an array of choices. Starters may vary from haggis, neeps and tatties with whisky sauce and baked potato skins to a classic Caesar salad. Main courses might include Gabbro steak and ale pie or tagliatelle pasta carbonara, followed by sweet treats such as vanilla cheesecake with summer berry compote.

Lillian (30 April 2009)
I had to arrange a two course lunch for 25 people, which had to be served and eaten within an hour and a half. Gabbro took up the challenge and did it beautifully. The meals were excellent as was the service and everyone was happy with the choices available and the bistro itself was very good for our numbers. We actually had the place to ourselves, which added to the day. I would highly recommend it to anyone looking for a corporate lunch. Most of our people left saying that they would definitely come back for lunch or dinner, very good value.
Luigi Logiodice (31 January 2008)
After a long and hard thought about where to go and have dinner, we decided to give Gabbro a shot. The place is cosy and nicely decorated. That night I ordered the sea bass and my wife had duck. Both dishes were excellent, moist, perfectly cooked, beautifully presented and generous portions! For pudding, we had the rosemary crème brule - an unusual but a great combination. We also had the opportunity to talk to the staff and the chef - helpful and friendly. We won't doubt in going back.
