Once a busy coaching inn, The George is now an even busier and much trendier hotel, with a thriving restaurant at its centre. The whole place has recently (2006) undergone a major refurbishment, one of those proper ones where the best has been retained and the changes are in the best of taste. Head Chef Rod Grossmann formerly worked at Restaurant Moro in London, by chance owned by the proprietor's sister, Sam Clark. As with so many restaurants nowadays the emphasis is on the local seasonal ingredients, much of it starting life in the farms of Kent and Sussex or the waters of Rye Bay. A day menu satisfies the passer-by looking for healthy nourishment and a couple of pints of what does you good, though the evening diner will find more sophisticated fare. Game terrine is served with onion marmalade and sourdough toast, or perhaps the stir-fried squid salad with red chilli and spring onions is more to your liking.
The oxtail stew with chorizo, mashed potato and sautéed curly kale is delicious, and the fruits of the sea may be evident in the form of coquille Saint-Jacques mornay, or a whole roast sea bream.
Service is fine and the wine list offers a selection that includes representation from the local vineyards.

Having been enticed by their website's promise of good food and wine I stayed at the George over Christmas. It was a big mistake. The food, other than breakfast, was poor - both in quality and quantity. I found the young staff enthusiastic but unsophisticated. Bearing in mind that this was Christmas and supposed to be a bit of an event, the management was conspicuous by its absence. The bar is expensive, as well. I cannot recommend the George.

Popped into The George on Sunday afternoon, intending to relax over a couple of drinks and then browse the menu for lunch. Whilst much of the menu looked enticing, the restaurant itself was a complete tip, with un-cleared tables full of dirty crockery that had obviously been sitting there for a while and four bar staff all busying themselves behind the bar - but not actually serving anyone. Eventually a waitress took our drinks order, after my partner had stood at the bar for 10 minutes, apparently invisible, and came to clear one of the tables - well, she removed the plates and glasses but didn't wipe the table, leaving bits of roast all over it. Another couple who had decided lunch was worth the effort left very promptly after finishing their meals; their dirty table - directly in front of the bar - was left un-cleared for another half an hour. In the end we just decided to stick to drinks and bar nibbles - which were delicious, especially the char-grilled chorizo - and give lunch a miss. Either this place is not employing enough staff to deal with a Sunday lunch service, or the members of staff just don't care.
