jeremys at borde hillBorde Hill Gardens are one of the great tourist attractions of Sussex, and, apart from being a wonderful dendrological experience, they also play host to Jeremy's Restaurant, benefiting from the classy food that Jeremy's offers while the restaurant gains with a dramatic setting.

Described on their website as, 'its light and airy interior and expanse of outside terracing overlooking the Victorian walled garden, is a rare find' there are few who would disagree.

Jeremy and Vera Ashpool have gathered many thousands of loyal and appreciative customers over the years. The opening of Jeremy's at Borde Hill is an exciting step in their restaurant's evolution, which has led from a tiny bistro many years ago to today's national recognition and awards. Much of the success in the kitchen comes from the choice of produce and materials and the regular use of French and Spanish techniques keeps boredom at bay.

The food has a lot to recommend it, both in terms of range and quality, and typical starters could consist of plaice goujon with courgette and almond salad; corn fed chicken croquette with chickpeas, organic tomato and coriander salad; assiette of smoked and cured fish with fennel dressing, and grilled quail with red wine, poached pear and herb blini.

Their local signature dishes include haunch of venison with puy lentils and bordelaise sauce, and pan-fried squid with a ragoût of chickpea, chorizo and red peppers, served alongside the homemade walnut bread, made daily on the premises.

Mains might well consist of loin of Southdown lamb with couscous, smoked garlic, aubergine caviar, hispy cabbage, roasted peppers and rosemary jus, cannelloni of creamed cauliflower, Bosworth ash cheese, sweet onion and parmesan crisp, or grilled fillet of South Coast sea bass, fregola, spring onion, pea shoots, braised fennel and chervil beurre blanc.

Outstanding amongst the array of puddings are white chocolate mousse with fresh raspberries and dark chocolate shard, and sticky toffee pudding with hot toffee sauce. House wines start from £16 for the white or red, and there is a good choice beyond in addition to a specially chosen selection each month to complement the seasonal dishes on the carte.

Every 6-8 weeks, a small party of 6-10 people meet up at Jeremy's to enjoy fantastic service and outstanding food. We used to meet up at alternative spots but realised that we got everything we wanted from this restaurant and decided to look no further. They have never let us down!

What do I like about Jeremy's? In the summer, I like to sit out on the terrace overlooking the walled garden, sipping a chilled glass of something recommended by Nick at the bar. The one-course specials are always a delight. Go one step further, and finish with some delightful desserts like Clementine jelly, candied Clementine jelly, or Jeremy's signature sticky toffee pudding, available come rain or shine. In winter try the roasted loin and sautéed kidney of Romney Marsh lamb with dauphinoise potatoes, sugar snaps and rosemary jus.
