Dinner at Pacific'O can consist of Cajun-spiced and seared Hawaiian tuna with tropical fruit, Imu-style shredded pork and roasted peppers with pepper-jack cheese, tahini and tamarind roasted New Zealand spring lamb, sashimi fresh fish tempura with white miso dressing and grilled filet mignon topped with gorgonzola cheese. Lunch can include shrimp wontons, ginger fish, chicken wrap and grilled spicy soy painted organic tofu with stir-fry Asian greens, tropical salsa and Thai jasmine rice. Conclude either meal with desserts like banana, pineapple and cream cheese puree in a flaky pastry served with macadamia nut ice cream, soft chocolate cake with strawberries, sorbet with seasonal tropical fruits or crème brûlée.
