This grandiose structure was originally built in 1903 and was part of the old Caledonian Railway Station, and then the Hilton Group decided to give it a new lease of life by transforming it into a stylish hotel as a result of which it now stands as a distinguished landmark on Edinburgh's skyline. It doesn't take to long for guests to be impressed by the grandeur of the Pompadour Restaurant, with views of Edinburgh Castle and Princess Street, with the spectacular chandelier as a stunning internal centrepiece. Head Chef, Spencer Wilson creates modern Scottish translations of time honoured dishes and the repertoire includes mushroom tortellini with pigeon breast, 28 day aged Black Gold beef with roasted spring vegetables; roasted rump of organic lamb with boulangere potatoes and an Earl Grey crème brûlée.

I ate at the Pompadour last night, and I have to say and indeed I am stunned to say, but, without a shadow of a doubt, the best meal I have ever eaten in Edinburgh. The food was out of this world, and the views of the castle, especially as the fireworks went off to signal the end of the Tattoo, were spectacular. I was honestly shocked at how perfect everything was, a completely wonderful experience. And not a child in sight! A sanctuary for grown ups!

Had a meal at The Pompadour recently. The last time I went was deceitful but times change. The young manager is charming and manages to create a great dining experience with class in what is the most beautiful dining room in Edinburgh (and certainly one of the most beautiful in the world). Expensive but worth trying. At last, The Pompadour is back!
