This grandiose structure was originally built in 1903 and was part of the old Caledonian Railway Station, and then the Hilton Group decided to give it a new lease of life by transforming it into a stylish hotel as a result of which it now stands as a distinguished landmark on Edinburgh's skyline. Head Chef, Spencer Wilson creates modern Scottish translations of time honoured dishes and the repertoire includes mushroom tortellini with pigeon breast, 28 day aged Black Gold beef with roasted spring vegetables; roasted rump of organic lamb with boulangere potatoes and an Earl Grey crème brûlée.
