I discovered Prines while living in Wichita Falls in 2000 and they have some of the best chopped beef brisket I've ever eaten, I was told they use only post oak to smoke the meat and light with a paper bag, they use no fuel to light wood. It doesn't even need any sauce as the flavour is that good! I think it's one of the top barbeque places in Texas.
