Using plenty of local, freshly sourced ingredients, he has created inventive and mouth-watering dishes that can be enjoyed by everyone. Starters such as ham hock terrine with Waldorf salad or poached pear and Devon blue cheese salad leading on to mains of braised shin of beef with horseradish creamed potato or potato gnocchi with wild mushrooms and blue cheese glaze.
