A tian of Cornish white crab with green apple and wasabi horseradish finished with a brown crabmeat dressing could give way to roast rack of Forest of Dean lamb with pancetta and gruyere Boulangere potato, lamb faggot, roasted plum tomatoes, and a balsamic jus. Desserts run to such dishes as lemon parfait with homemade lemon curd and Griottine cherry confit.
