After splashing out on a £4m refurbishment, The Fish House at High Street in Chilgrove is now a picture of stylish indulgence with extensively landscaped gardens and an elegant restaurant. The interior is a symphony of design features with paintings by John Holt, bespoke hand-made furniture and linens and drapes creating a wonderful contrast with the room's antique oak wood. Innovative dishes created by Head Chef Alan Deeson and team is a fine example of perfection in execution with ballotine of foie gras with pistachios and pineapple; John Dory with clams and Jerusalem artichokes, and chilled blackberry and goats' curd martini; all of which can hardly be anything but much appreciated choices.

Wine lovers are in for a treat too with over 300 wines on the list, stocked up in caves for guests to inspect.

Situated where it is at the foot of the South Downs naturally there is great walking, and fifteen boutique bedrooms in which to relax after dinner or sink into a Bedouin style hot tub, set under a pagoda.

The newly re-opened Fish House was a fantastic experience for us when we visited for lunch. As loyal customers at David Barnard's previous establishments, we expected a rare treat, but as always this iconic genius has once again delivered in spades. From the moment we entered, we felt enveloped by the welcoming staff and beautiful environment. The seafood, as always, is of the highest calibre, all organic, everything prepared in house, and wonderful homemade bread. Each course was a delight for the taste buds. The brand new kitchen brigade led by Alan delivered, pure and special. I can't wait for our next visit. Congratulations David. Congratulations to all involved.
