A secluded Victorian house where Martel Smith produces excellent food composed with carefully selected materials, giving him a faithful clientele many of whom regard themselves privileged as a result. Try starting with tian of Cornish crab with apple, mascarpone, caviar and chilled tomato essence. Hard to resist the braised pig's trotter stuffed with veal sweetbreads and black pudding, served with celeriac puree and essence of morels. To finish on a triumphal note there is the hot pistachio soufflé with bitter chocolate sauce. French-led wine list with bottles from £16.
