A large and comfortable diner located in Kingston, Rosita's restaurant is situated on the waterfront, overlooking the Rondout Creek and Hudson River. It serves a wide range of international cuisine focussing mostly on Mexican food and is a favourite haunt for the locals either for large gatherings and parties or smaller get-togethers. The food features traditional Mexican classics of seafood that is fresh together with other non-vegetarian fare.

The à la carte menu consists of dishes of tortellini alfredo; grilled medallions of tender steak with blue cheese sauce and served with mashed potatoes; fajitas of chicken, steak, shrimp and scallops and traditional Mexican combination platters with a number of veg and non-veg stuffing served with a variety of sauces and vegetables.

Guests can enjoy their food either in the open air patio or in the dining rooms with drinks of margaritas, tequilas and beers while watching the fun and frolics taking place at the marina.
