An enthusiasm for food coupled with a childhood ambition to become a chef inspired Nik Tinney to open his own restaurant in his hometown, Truro. A humble beginning from washing dishes at the Brookdale Hotel in Truro, Nik moved to working at a number of London's top hotels and restaurants and returned to Truro after 16 years. With his wife Traci he opened Saffron in 1999, since then the eclectic menu and the passion with which it is translated has gained Saffron popularity and an ever growing loyal base of customers in Truro. Menus are changed weekly in accordance with availability of fresh ingredients and the seasons. Menus are changed weekly in accordance with availability of fresh ingredients and the seasons. Start your evening with potted hough with cauliflower piccalilli and pioneer toast, or wild mushroom soup with potato croûte. You could follow up with spiced Cornish duck in an apricot tagine, or grilled whole lemon sole with parsley mash, saffron and grain mustard butter. You might wish to end your meal with vanilla panna cotta with bananas, or a citrus dessert plate, only two from amongst a good selection.
