French culinary influences have shaped many a bistro and The Saint Restaurant, Brighton aims to bring to its patrons the delicate and subtle flavours of France. There is a strong leaning towards locally grown produce and foraged herbs that add freshness and zest to the food. This AA Rosette restaurant also supports the Slow Food movement, something that is apparent in their well planned menu.
A butternut squash risotto with parmesan or chicken liver parfait served with toast and chutney lays a firm foundation for what is to come, while you debate on choosing between the slow cooked pork belly with rosemary jus, Sussex rib of beef, and crispy confit duck leg with orange sauce and crisped vine leaf for mains. A difficult choice indeed and the dilemma doesn't end with dessert either, where you could have chocolate and cherry torte with raspberry sorbet or Madagascan vanilla crème brulee with almond biscuits. The extensive wine list is European with many Mediterranean lines that accompany every aspect of the meal superbly.

This restaurant is one of the most pleasant surprises in Kemp Town. The food is absolutely divine and the prices were very reasonable. As for the atmosphere, it's friendly and laid back.
The menu has a mixture of French and modern English cuisine. They even do a fry up! Certainly the best and most creative one I've ever had. For dinner we tried their mussels for starters, lamb fillets in port jus. The cheese platter had a selection the finest French and English cheeses. The wine menu varies, for an extravagance you'll never regret try their Chateau Neuf du Pape.
Certainly one of the best in Brighton and definitely a bargain for what it offers.
