Owners Ken Handley and Jane Hughes took a conscious decision that they wanted to set up their first restaurant doing things their way. As passionate believers in quality over quantity they had no previous experience, but they had eaten out a good deal and seldom if ever did they find the results 100% appealing. Cynics might say they never will, but not only is this not true it is also pretty negative. The result of all this is Seasons Café Bar and Bistro to give its full title, where an analysis of their success reveals that vital key, attention to detail.

It starts with location, in the heart of Brighton, in the North Laine only five minutes from the railway station one way and the night life the other. We had the chef’s breakfast here and would recommend it to anyone. Excellent ingredients used and presented beautifully.

I have dined at most of the restaurants in Brighton, and this undoubtedly is the best. As you walk through the door you realise this is not just another restaurant. The decor is chic and elegant, and lighting is perfect. The staff are very attentive and made us feel very welcome. Then there is the food - oh my god! The food - it is excellent. We had the lobster as a main course and chocolate mousse for dessert – fantastic! If this place has not earned a Michelin star in the next three years, I'll eat my hat.
