Silver Room at Hush, The

Silver Room at Hush - an attractive dining area on the first floor - is a smallish oasis of calm amid the hustle, bustle and general cheerfulness that makes up the hugely successful bar and brasserie complex that is Hush, in a delightfully unusual hideaway just off Bond Street.

The menu offers a wide range of popular classics, but it is a splendid example of how to use the ingredients of the country to best advantage, revolving on the timeless cycle of the seasons, identifying the best with unerring accuracy.

Starters could include salmon sashimi with hot sesame oil, caramelised onion tart with Blue d'Auvergne cheese, or some of that everlasting favourite, rock oysters with shallot vinaigrette.

The rousing selection of main courses begins with breast of corn fed chicken with bubble and squeak and crispy bacon. The return of chateaubriand for two (did it ever go away some may say) is partnered with truffled potatoes and Madeira sauce, and the fillet of cod with saffron risotto and crispy leeks offers an interesting modern twist.

The steak tartare with pommes allumettes, a fairly rare sight on London menus, almost always proves irresistible while the pan fried fillet of sea bass with artichoke Lyonnaise and truffle dressing is flavoursome and almost unexpected in its goodness.

Amongst the splendid array of desserts, the honeycomb ice cream with hot chocolate sauce and the sticky toffee pudding with crème fraîche are highly commended; they are a real symphony of tastes that could round off a good meal with élan.

The wine list is an extensive display of excellent choices that come from around the world, mainly old world favourites from France and Italy that sit comfortably alongside numerous vintages and a few appealing New World selections.
