Tapas Brindisa

During the last ten years a minor revolution has taken place in the eating habits of we Brits, and it has its genesis in Spain. Under the generic term of tapas it could equally be listed under 'grazing' and by now it is a familiar and increasingly popular attitude towards eating. The abandonment of the old three-course job was long overdue anyway; here we have a way of eating more suited to the 'work hard, play hard' philosophy of our time.

Brindisa is one of the more sophisticated of the genre. The brainchild of the Spanish supplier of that name who operates out of Borough Market it is understandably more Spanish than some, even if the menus are in English. With a high buzz factor it offers tapas made from simple and authentic ingredients to a very international crowd. Recent press comment described the tortilla as completely up to scratch - warm, sweet and succulent. For those with a leaning towards seafood make sure you don't miss the cured Cantabrian anchovies from Ortiz. Of the many tapas bars now operating, many well beyond London, Brindisa is probably one of the best.
