Dovecote classics of Bolsover smoked salmon, and chicken liver parfait with toasted brioche make appearances first, followed by a lightly roasted sea trout with crushed Jersey Royals, asparagus, and sorrel cream sauce, or fillet, belly and homemade sausage of local rare breed pork with spinach, spring onion mash, and calvados sauce.
