The talented kitchen team puts together uncomplicated, full-flavoured food made from the freshest, highest quality seasonal produce. There are two choices per course at each stage at lunch, expanded to six choices at dinner. Try the Thai-seasoned steamed mussels or veal shin ravioli with saffron braising juices, to start. This could be followed by roast venison with braised Savoy cabbage, potato gratin and a lively sticky sweet sauce or rack of Sussex lamb, artichoke purée and fondant potato. Round off with malt whiskey and Clementine jelly or praline soufflé and brown butter ice cream.
