An old coaching inn on the Fosseway, once known as Lord Chedworth's Arms is today a beautiful Cotswold retreat called the Inn at Fossebridge. The world might have become a different place during the inn's three-hundred-year history, but the pretty villages that surround Fossebridge look just as they did a few centuries ago. With comfortable accommodation and great dining facilities, things at the inn have certainly changed too, and this has brought recognition in the form of four AA stars. Since sheep have long been at the heart of the Cotswolds, the restaurant's signature dish is roasted best-end of Cotswold lamb with herb crust, fondant potatoes, fine beans wrapped in bacon, garlic and rosemary jus. Other dishes to look out for include a salad of wood pigeon and pancetta with black pudding and apricot marmalade, and Billingsgate scampi, skinny chips, petit pois and tartare sauce.
