One of the strongholds of Scottish cuisine is located in this unpretentious and warm-hearted house, formerly the creation for many years until 2006 of David and Patricia Wilson along with their family, it has now been taken over by Geoffrey Smeddle, who was the Executive Chef for Conran Restaurants and helped to set up the renowned étain in Glasgow. He has continued the fine tradition that they established there. He and his wife happily share The Peat Inn with their delightful staff and many friends. One always has the feeling it is rather like a boat that has achieved the plane and sails effortlessly along with a touch on the tiller as required. You get the feeling that they genuinely look on their clients as much more than mere guests.

You get the feeling that they genuinely look on their clients as much more than mere guests.

The truth is somewhat different as an amalgam of organisational, cooking, management and people skills is deployed to present this compelling spot. I can think of few places where I would prefer to eat or stay. Dishes draw heavily on the best of what is locally available in terms of game, fish, vegetables and even truffles. The cooking is classically based upon French cuisine, with the emphasis always on flavour. Over 400 wine bins await your pleasure at prices which reflect a love of wine rather than the balance at the Bank.

This was my first time at the Peat Inn, my wife booked dinner and an overnight stay for a birthday treat, and having heard of the reputation of this establishment I had high expectations. I needn't have worried however, upon arrival we were warmly welcomed by friendly staff and shown to our room without the usual palaver of 'sign here', can we have your credit card just in case. Our room turned out to be a split level suite with beautiful views across the countryside - the complimentary crystal decanter of sherry, the platter of fresh fruit and the homemade shortbread biscuits were a very nice welcome touch. Dinner was the Tasting Menu of six courses, all of which were superbly presented and expertly served by attentive staff who were well versed and able to describe the content and composition of each dish - whilst this might not appeal to everyone, being a bit of a 'foodie' it appealed to me.

Each course had an accompanying wine introduced by a knowledgeable Sommelier. The wine with the quail course was bit overpowering, but the bodegas briego, reserva, ribera del Duero 2000 served with the Lamb was a bit special. Our meal was capped off with a vanilla parfait, poached rhubarb and an amazing blood orange sorbet followed by coffee with handmade chocolates. A knock on the door at 09:00 the next morning signalled breakfast, and for those expecting a trolley to be left in your room for you to help yourself, this isn't what happens here. Two of the Inn's staff set up the breakfast table in the 'living room' section of the upper level of your suite. Boiled free range egg, warm homemade bread and jams, warm croissants, yoghurts, fresh fruit salad and breakfast tea, all served in tastefully patterned crockery that reminded you of the countryside setting you were sitting in. For me, a great birthday treat - one I'll remember for some time, and an establishment I'd definitely like to visit again in the future.

I had the pleasure to visit The Peat Inn twice during August, once as a family group celebrating our son's wedding and the second time with my wife. On both occasions the whole experience was outstanding. We received a very warm welcome and made to feel as if the staff really cared that we should have a great experience. On both occasions the food was outstanding in terms of quality and taste. But what contributed immensely to the pleasurable experience was the staff, by which I mean all the staff. They were able to achieve a fine balance of friendliness with the highest level of professionalism. The service was faultless. Granted, it is not a cheap establishment, but one is aware of this from the outset. I believe the wine list, while exceptionally good, does seem to be skewed too heavily in the direction of higher priced wines. I am sure the owners could add a few lower priced wines without adversely affecting their image or their margins.
