Senior Chef Daniel Humphries learned his trade under Sean Penn, and is now sharing his culinary creations at The Vaults. The Vaults menus of classic and contemporary dishes are a medley of fresh flavours, with starters such as the salmon and prawn fishcake, and pan-fried chicken livers and mushrooms with braised leeks with piquant jus. Oh, what a fantastic place! I was part of a party of ten and we ate at The Vaults last Thursday night. It was my first time at The Vaults and I was very impressed by the layout of the whole place, it’s so unusual - Birmingham needed a place like this! We had dinner in one of the arched areas in the restaurant which was perfect for our group. We could make noise and not to be worried about disturbing anyone else! The food was top notch, great British food with lots of imagination. I had sugar seared tuna steak I’ve never ate tuna like that before and I’m quite a fussy eater, but it melted in my mouth. I dared to have the passion fruit and lemongrass creme brulee for dessert and it paid off, such an unusual combination but the tastes and textures went together just perfectly. After the meal we went into the bar, I hadn’t realised there would be a DJ on and we hadn’t planned on staying long. But the music was fantastic, old school house and fun music - we ended up staying until 2 AM, oops! Sign of a great night though. Thank you to The Vaults, I just had to write a review for this great venue!
