Trader Vics is a chain of Polynesian restaurants started by Victor Jules Bergeron in 1932 and today has over twenty-five branches in various parts of the world. The London branch is a friendly tropical oasis buried under the soaring London Hilton on Park Lane Hotel. Carved tikis and cane chairs add to the sense of lush South Seas escapism, while the lush gardens and the staff dressed in bright colours complete the experience. The restaurant offers a brilliant list of cocktails and drinks including their own invention, the exotic Mai Tai. The island-style cuisine draws on the French, Oriental and American influences of its Polynesian heritage, and uses the best and freshest ingredients from around the globe.
