The newly refurbished AA rosette winning Restaurant 1563 is a delight for gastronomes on the look out to extend their culinary relationship with  Suffolk. Local fish is literally a hop away with many of their suppliers just on the beach opposite the hotel, so amongst starters, expect to find flaked smoked mackerel with horseradish capers and melba toast followed by baked salmon with potato salad and chunky gazpacho. End with the strawberry shortbread with vanilla cream or maybe something from the selection of ice creams and sorbets.

Fresh seasonal ingredients are featured extensively and you could expect to start with the fish stew with tarragon aioli and chives followed by roast chump of lamb, dauphinoise potatoes, buttered Savoy cabbage and a red wine jus. Finally end with the stem ginger baked Alaska, rhubarb and whiskey compote. Wines and beers naturally come from the famed local brewery Adnams.

For summer there is a south facing terrace, which is a sun trap from dawn till dusk so you can enjoy your meal in the cosy warmth outside.

On the traditional farmhouse type menu, typical starters could include tagliatelle and seafood cocktail with saffron cream followed by a main course of 9oz. rump steak with hand cut chips and Stilton sauce. The poached strawberry pavlova with vanilla cream and toasted pistachios beckons those with a sweet tooth and the drinks list includes favourites such as Adnams Bitter, Becks, Peroni and an excellent selection of wines.
