"You are what you eat" is a well known catch-phrase that has about it the ring of truth, and many feel that the structured pattern of modern life is not conducive to natural eating. Itadaki-zen seeks to play its part in restoring a more natural basis to the potentially joyful habit of eating out and eating well as a means of achieving an agreeable taste and the healing qualities that go with the food.

Diners will encounter rice, root vegetables, seaweeds, soya beans and by-products prepared with care and unhurried methods. Side dishes of grilled tofu with a special sauce called yangyeom are accompanied by seasonal vegetables simmered with tasty sauce, large non-seaweed sheets, bean sprouts seasoned with yangyeom, cold tofu with special soy sauce topping ginger and spring onion blend with fresh roll, spring green lightly boiled sheet enfolding okara and vegetable filling, followed by seaweed salad and miso soup.

In terms of desserts kanten jelly, made from seaweeds, is a vital ingredient in producing such mouthwatering looking confections as soymilk pudding, a delicious mango pudding, a sesame pudding, and the wonderfully named and accoutremented fruits-awase pudding.

The lunch box is a time honoured institution in far-Eastern lands, a little something to keep the engine turning, soothe maybe. The mixed rice version packs a punch with mixed rice of five kinds of grains, five seasonable vegetables simmered with tasty sauce, along with Nori's seaweed sheets and bean sprouts seasoned with Yangyeom special sauce. One of the even more nutritious dishes is Hijiki-no-nimono, a combination of mix vegetables, fried tofu in shoyu sauce and hijiki, a variety of seaweed full of calcium and iron.

But my money goes on the homemade kimchi, naturally preserved vegetables in a piquant blend of red chilli, fine nuts, ginger root, crushed garlic and many other ingredients. Amongst all this beneficial and kindly food it seems at first strange to spy bottles of Whitstable Bay ale, until on closer inspection they turn out to be organically produced. Wines from a well spread net include some impeccable names, and of course, traditional Japanese sake.

When you enter a chain restaurant there is always a sense of déjà vu, yet with the twelve outlets of Giraffe, this may not really be true. Russel and Juliette Joffe and Andrew Jacobs' philosophy behind this group of restaurants is sustaining the driving force of healthy, happy eating, while retaining the difference each location brings. This includes minor variations in the menu too, and explains why the restaurant does not like to be called a chain, but prefers being referred to as a herd. The origin of its quaint name too, is interesting. The giraffe has the largest heart in the animal kingdom, and with its magnificent height is able to perceive things differently. These two features of being different and large hearted sum up the restaurant's proclamation of 'love, eat, live'.

Giraffe offers world food and adds an unusual twist to some familiar dishes. Their breakfast menu has stacked pancakes with bananas and blueberries, warm waffles, ranch styles tostadas and healthy veggie options. Some great starters are a mezze plate with warm naans that offer the best of many cuisines - grilled halloumi, hummus, tzatiki, ratatouille and falafel.  Japanese king fried prawns are a hit, while another bright spot on the menu, is the colourful sunshine antipasti bruschetta, a clever combination of artichokes, mozzarella, cherry tomatoes, olives, roasted peppers, red onion and rocket on pesto foccacia. The conversion of the Newbury library and other listed buildings, such as those in Salisbury, Romsey and Mayfair, are all welcome examples of 'new use'. Their trendy and sophisticated décor usually consists of tiled or wooden floors with delicate lights and colourful paintings, along with wooden furniture and sparkling cutlery, creating a setting that is suitable for a relaxed lunch, a family meal or an evening out with friends.

The restaurants are of particular appeal to those who like genuine Italian cuisine, and they use only the best seasonal products, many of which are imported directly from Italy. The menu includes pizza, pasta, risotto, grilled meats, fresh salads and frequently changing specials.

Starting from a chance encounter in 2003, two years later the first Hummus Bros opened on Wardour Street, with a strong following, and then a second outlet followed, on Southampton Row, Holborn, which is not surprising when you consider their value for money lunch meal.

But it's more than just that. Think hummus with a seasoned chickpea or chunky beef topping, with side dishes of mixed or grilled vegetable salad, tabouleh or smoked barbecued aubergine. Puddings come in the form of double chocolate brownie or perhaps malabi, a delicious milk-based dessert with date honey.
