Nowhere is this better demonstrated than in Derby where in Brook Street an old Wesleyan Chapel has been taken into care by an inspiring couple, Didar and Paula Dalkic. The handsome, dignified building, once a home to fire and brimstone sermons dispensed from the awesome heights of a massive pulpit-cum-podium, has an interior that is in complete contrast to its rather austere outside, and if those who worshipped here over the centuries kept the outside simple they certainly made sure that God was worshipped against a background of splendid style within.

The adaptation has been done with skill and understanding, muted contrasting colours that bring out the best in the fittings, making Masa a restaurant with a real difference. The more tiresome features of so many churches, like draughts, have been ironed out. Downstairs a wine bar has been established, creating an ideal rendezvous and offering a light lunch daily. A typical menu could be a black pudding and poached egg salad with mustard dressing, spinach, goats' cheese and parma ham pasta, or a generous open sandwich of roast suckling pig, apple and plum compote.

The bill of fare changes seasonally and all the food is made to order, portions are large and the cooking is well skilled. Start your meal with a creamy natural smoked haddock and potato soup, and sesame crumbed strips of chicken served with sweet chilli sauce. For main course order arctic char sautéed with queen scallops in a herb and lemon butter or char grilled sirloin steak with smoked bacon and blue Stilton cream. Finish with hot chocolate pudding with fudge and hazelnut sauce.

In order to remain at the forefront of café bar culture, a number of their sites have been refurbished during the past year. All outlets offer just the right environment to relax - with comfortable leather sofas and private booths. Large projection screens show live sporting events and wi-fi is available free of charge.

Food is served all day, seven days a week and menus change monthly with each outlet playing host to events and offers like ladies nights and set menus. Music policy depends on the time of day, ranging from classic background to uplifting dance at weekend nights.

The breakfast menu offers, among other choices, the typical English Fat Cat breakfast. The all day menu is extensive and has good choices, and is best known for sandwiches that include crispy chicken focaccia, smoked haddock rarebit and lamb tandoori naan.

Amongst the starters, expect to find grilled chorizo salad, potato skins and homemade fishcakes. If you like to keep it simple, the rustic chilli con carne is a good option - you could also add a bowl of nachos to it. Mains could offer beer battered haddock and chips, and favourites like bangers and mash, char-grilled salmon fillet or spinach and black olive gnocchi.

There are popular desserts like chocolate and apricot torte and Italian lemon cake for those wanting to give their meal a sweet end.
