Fresh haddock from Grimsby, trout from Louth, Fulstow pork and cheese from Market Rasen, these are a few of their favourite things at The Brackenborough. The hotel is surrounded by beautifully maintained lawns and gardens and is situated just outside the historic town of Louth, in the Linconshire Wolds.

At the one AA rosetted bistro expect to find choices such as medallions of beef with seared scallops, local farmed trout and grilled asparagus, and oriental duck, sweet chilli and Japanese udon noodles.

With London wine merchants Corney and Barrow as their suppliers; real cask ale, including their own Oak Ridge Maverick and a number of malt whiskies, the bar caters for varied tastes. They have a live pianist and singer on Wednesdays and Thursdays.

The Beaumont Hotel with its range of fantastic rooms and suites in Victoria Road, Louth, is home to the Terrace Restaurant that gives guests an opportunity to enjoy tasty British and international cuisine in a relaxing atmosphere. The emphasis is on quality, and freshly created dishes; a regularly changing menu could offer starters of walnut stilton and pear salad, and rustic farmhouse pâté, and mains of a rack of hickory smoked baby ribs, tender chicken Alexandra, pasta carbonara, and lamb provençal among other choices. Steaks and main courses are served with fresh vegetables, or a side salad and fries. Strawberry cheesecake and tiramisu help bring the meal to an end.

The bar and pre-theatre menus offer a range of options for those who don't fancy a three-course meal in the evening or are in a hurry.

This comfortable Georgian house now forms the centrepiece of a thriving health and leisure facility, and that, perhaps surprisingly, revolves round an excellent restaurant which certainly makes more than the odd nod to the good work going on in the gyms and saunas. Mark Vines sources quality ingredients and the results are very good. Try smoked salmon and brie bruschetta, followed by seared noisettes of English lamb with an acacia honey and thyme jus. To round off a meal, which has all the stamp of, the professional go for the brandy snap basket with caramel ice cream and bitter chocolate sauce. House wines start at £10.95.
