Over the last couple of years, the dining areas have been continuously updated and refurbished to provide the classic but contemporary look which Chapters is renowned for. The restaurant has only thirty covers, and is suited for those who prefer a more formal gourmet service and dining experience, while the brasserie seats fifty and is close to the wine bar, designed for guests that prefer the more relaxed and casual style of eating.

All meals are prepared to order and most of the ingredients are sourced locally with delightful courses such as local langoustine nestled on potted shrimp and celeriac remoulade to start, followed by  Gressingham duck breast, confit of duck leg, baby onion, onion purée, sweet potato and grain mustard jus, and desserts such as sautéed rhubarb and crème patisserie pave with rhubarb sorbet.
