Shaw Hill is a beautiful hotel, golf and country house situated in 192 acres of its own land in Whittle-le-Woods. A magnificent Georgian exterior is matched by the beauty of original features inside. If playing golf is not your way to relax, head to the leisure complex that offers a range of facilities. Once you've had your share of pleasure visit the elegant AA Rosette restaurant for a meal. The Red Cat treats people across the North West of England and beyond to an enviable blend of a relaxed atmosphere and tasty modern British cuisine, coupled with helpful and attentive service.

The building where the restaurant is located has lots of character with original stonework and wooden beams. Much of these have been retained in a recent refurbishment; contemporary seating, lounge style sofas and a traditional wood burning stove are welcome additions.

It is evident from the quality of the dishes that Head Chef Chris Rawlinson works hard to source the best produce of the area. An exciting midweek menu takes in smoked mackerel tartare, quail eggs and soured cream, and cod fillet accompanied by herb risotto, roasted cherry tomatoes and salsa verde. Expect to find chicken liver pâté; braised rabbit leg, crushed potatoes and thyme; roasted turkey breast, and desserts of mulled wine jelly and glazed vanilla rice pudding in the evening. A separate menu delights the vegetarian palate.

Wines from across the globe suit both the tastebuds and your wallet.

Start with prawn sundae, Greenland prawns served on a green salad with Marie Rose sauce, calamari romesco, deep fried calamari rings with spicy tomato and chilli sauce, and sardines grilled in onion, chilli and garlic, and served with a lemon dressing. For main course order Spanish lemon chicken, marinated chicken pieces, pan-fried with cinnamon, ginger and lemon zest, Catalan pork strips cooked in white wine, cayenne pepper and garlic, topped with roasted pine nuts, and swordfish steak in a creamy white wine shallot and garlic sauce. The setting is superb. Ancient woodlands and the picturesque River Yarrow flowing through serenely makes Nineteen Duxbury Park a stunning location while the stylish and sophisticated interior rounds off the dining experience remarkably. Of course the food is delicious - classics rendered in a simple fashion so that flavours emerge clearly - and the bar adds another dimension to your evening where you can relax with a drink and enjoy the spectacular scenery.

A look at the menu might reveal starters of poached apple and Blacksticks Blue salad with wholegrain mustard dressing and crisp Lancashire smoked pancetta. It could be followed by a main course of Johnson and Swarbrick duck breast with parsnip mash, braised beetroot and plum jus or a hearty 10oz rib eye steak with shallot rings and cheese fondue.
