Named after the famous coffee growing island in Indonesia, Java World Bistro in the heart of the historic town of Inverness offers international cuisine created by using the finest Scottish produce.

For the Andersons, this conventional Bistro is the culmination of a long career in the catering and food industry, much of which was spent in Africa and the Middle and Far East.

The menu with its global touches likes to keep things lively, so bruschetta al pomodoro joins hands with prawn tempura in a bonito flavoured dipping sauce for starters. These could be followed by the Ethiopian lamb watt casserole cooked with red onions, spices and vegetables, or the Chinese style pork escalope served with star anise and ginger coulis.

Desserts include banoffee pie with cream and toffee sauce, and double French crêpes with a filling of your choice. Take a gastronomic tour around  the world in the relaxed and trendy ambience at Java.

Creelers Skye's Top Small Restaurant

Lower Harapool, Broadford, Isle of Skye, IV49 9AQ [Map]

Lucky are those who live in the remote places where flourish the produce that people in cities cry out for, pay through the nose for, and travel great distances to enjoy. For there is nothing to beat the freshness of fish and shellfish hauled from the deep dark waters of the West Coast of Scotland. Nor are these sentiments confined to seafood only - venison, game, garden vegetables, eggs laid by hens who roam freely, all combine to make somewhere like the Isle of Skye seem even more idyllic than it obviously is.

So to eat there, looking out over the waters of Broadford Bay, is something of a subliminal experience. For starters expect to find smoked venison, local hand-dived Princess scallops, or the famous Creelers seafood gumbo, said by the Louisiana Authority no less to be some of the best in the world and also served in mains-sized portions. Other mains include Cajun steak (the Chef has inclinations in that direction), or a pan-sautéed steak of Skye salmon. You may have the finest fish and chip shop in the world within easy reach of home, but nothing, absolutely nothing, tastes as good as the local haddock at Creelers, pan fried simply in bread-crumbs. The pot-roasted haunch of wild venison has a flavour all its own, with the firm meat poised at the point of disintegration.

Stapag is not a name familiar to many but it disguises a famous Highland delicacy that invokes crowdie, whisky, honey and oatmeal, perhaps Scotland's answer to sticky toffee pudding; then there's Creelers chocolate mousse made with cocoa-butter chocolate, or if you would prefer Chef's hot orange sauce, made with at least some raw egg. But who cares when the eggs come from such pristine surroundings?

Creelers compare the putting together of their wine list with an election manifesto - must appeal to everybody, have relevance to a wide variety of issues - sorry, dishes - and yet still be affordable. Given their own wine list I would back them for No 10 any time they cared to stand. But I am sure they are much too attached to the West Coast for that.

It's a longish way from the London Ritz to Dornoch but that's the journey Michael and Kerensa Carr travelled in 1995 to set up their restaurant with rooms, now a well-respected and much sought-after haven for those who know and appreciate their food and wine. Their comfortable and welcoming Victorian home is open seven days a week if you wish to stay (but check in advance in winter) and for dinner every night except Sundays and Mondays. Booking in advance is essential.

There is a weekly changing menu with three choices per course selected from a range of elegant and good value dishes such as Maryland-style crab cake with salsa verde, loin of venison with brandied cherries, walnuts and thyme, followed by layered mango and coconut mousse with lime syrup. Their impressive list of suppliers includes J M Munro, the renowned Dingwall butchers, deli-foods from Vin Sullivan in Abergavenny, and Munro Fruit Merchants in Tain.

Wine is taken seriously - and often - and there are currently about 70 on their list. No one supplier is used exclusively, but it is encouraging to see household names on the list including the Corney and Berrow/Whighams of Ayr duo amongst them.

The Waterside is a privately owned hotel located on the beautiful banks of the River Ness, in the heart of Inverness. The Conservatory Restaurant overlooks the river and the décor creates a pleasant contrast with the lush foliage that surrounds the glasshouse. Choose from a selection of modern British and Scottish fare while you commune with nature.

The kitchen steers clear of the controversies that abound regarding endangered species of fish by opting to serve only those that are plentiful and delicious. These influences shine through the menu as there is a special section dedicated to fish lovers. So the North Atlantic prawns starter, the pan seared fillet of Scottish salmon and the assorted seafood platter help you indulge without guilt. The reassuring sight of eggs Benedict, sirloin steak and lamb's liver can be followed by Welsh rarebit or a warm apple and sultana franzipan tart.

The Ferry Boat Inn - 3 star Accommodation For an Inn with Rooms, awarded by Visit Scotland - is ideally situated right on the shorefront in Ullapool overlooking Loch Broom, so some truly panoramic vistas are guaranteed. There’s an impressive bar with a fireplace and there are a few things more relaxing than sitting by the window and taking in views of the sea with a pint in your hand. There is also a clean and airy dining area, which is equally pleasant. In the winter there is always a roaring real fire, beside which you can sample a dram or while away the evening with a game of darts or cards. The Ferry Boat Inn is right on the busy main street in Ullapool, very near the Harbour and Ferry Terminal, so do note that parking is at a premium in the summer.

The menu opens with the likes of grilled goats' cheese, wood pigeon breast and beetroot salad with pickled walnuts and highland game terrine with red onion marmalade. Main course options include pan fried duck breast with braised red cabbage served on mustard mash; smoked haddock and black pudding parcel, wrapped in Parma ham with sauce mornay, and Italian stuffed aubergines with tomato salad. Cheesophiles might opt for a Scottish cheeseboard with oatcakes and for the rest a sticky toffee pudding should appeal.

Reservations are essential in the summer, when The Ferry Boat Inn is busy, however, in the winter tables should be available without reservations. Food is offered seven days a week with the menu changing daily, depending on what local produce is in season or recommended.
