Opened in 2001 and situated on the banks of the River Ness, The Mustard Seed is a relaxed and informal, modern style family restaurant. Located in a former church, The Mustard Seed retains the feel of its former existence with its high, vaulted ceilings and mezzanine floor. The arched windows provide natural lighting that combines with the vibrant mustard yellow interior and restored architecture of old to highlight the ornaments and paintings that adorn the walls.

Their menus change on a weekly basis and are accompanied by daily-changing specials that reflect the region, the country and the time of year. Vegetarian options are always available, whilst menus catering for the younger customer are also available.

Using only the freshest Highland produce, The Mustard Seed offers a menu that combines traditional French and Scottish cuisine with elements of the New World, producing a interesting and different choice, with daily specials on offer.

Dishes could include: grilled Mediterranean vegetable risotto with red pesto or duck liver and foie gras parfait with candied orange to begin, followed by crispy salmon with angel hair pasta and chorizo sauce or marinated pork fillet with Sicilian sausage risotto.

Pizza Express remains a hugely popular bedrock of casual eating. Its popularity is testimony to the fact that across the country, they have restaurants where you will always be guaranteed a good nosh, with children's tastes being well catered for.

Pizza Express has gone even more Roman, and following the success of that particular example of listening to their public have introduced Romana pizzas, including the scorching Etna and the hearty Siciliana.

These pizzas are now thinner, bigger and crispier, and if that sounds like a marketing line, it is. However, unlike many such lines, this one is true, and their quality is always consistent, though cleverly they have still managed to retain a homemade feel to their pizzas.

As an alternative to pizza, try their pollo pesto - cavatappi pasta with torn chicken breast, mushrooms, red onions and mozzarella in a creamy gruyere, parmesan and pesto sauce and finished with grana padano - or the niçoise salad with mixed leaves, yellowfin tuna, free range egg, green beans, potatoes and tomatoes with olives, anchovies, capers and house dressing.

Many of the big chains have come a long way, and Pizza Express is certainly amongst them. One of the first to be quoted on the Stock Exchange - in 1993 - Pizza Express is not a franchise operation and retains tight control through its own staff.

Their wine list - though short - contains some surprisingly good offerings, especially their intense Australian Chardonnay, and a big, full-bodied Merlot from Cusumano, Sicilia.

The Cross is located in the delightful Highland village of Kingussie and is a family run restaurant with rooms. This converted tweed mill combines quality with simplicity and good food with a warm welcome resulting in the accumulation of numerous awards including 3 AA Rosettes for their restaurant. The emphasis is on wholesome Scottish food served in a dining room suitably redolent of antiquity combined with strikingly modern works of art and tasteful fittings.

A starter might be pressed organic highland chicken and young grouse terrine with fig chutney followed by seared loin, braised cheek and slow roast belly of free range Moray pork, curly kale and caramelised onion, potato and truffle gratin. An indulgent dessert takes the form of the hot chocolate fondant with a decidedly different chilli ice cream. Dinner is a five course presentation with choices on mains and dessert. The wine list is highly regarded, and those not nursing a grudge against the French will be overjoyed to observe that French wines are back on the list.

Café 1 has received wide acclaim for its contribution to the cause of good Scottish food in Inverness. The décor is stunning with an overall impression of richness and warm comfort. No wonder people keep on coming back. But that is only the beginning. A starter could be drawn from penne, salmon, basil and white wine cream sauce or a bruschetta of mushrooms, red onion and peppercorn.

It offers a typically Modern European approach to food, and excursions to all parts of the globe are not spurned, witness the Thai red vegetable curry with coconut milk and basmati rice. An Angus rump steak could come in handy after a strenuous day at the stalking and for those who like to keep their food uncomplicated the chilli and garlic pork sausages at Café 1 have a good pedigree, with mash and onion gravy.

Their bistro menu lunch at £6.50 for two courses must represent some of the best value north of the border. The wine list marries up well with the décor and prices are not far behind, but some rewarding bins await those with patience. Café 1 is a valuable addition to the gourmet life of Inverness.
