Wall murals, fabrics and artefacts add to the exciting feel and diners can try out various gastronomic delights just like ancient Mongol warriors who cooked their meals on upturned shields over camp fires.

The Mongolian feast is immensely popular where starters could include cumin flavoured minced wild boar in a crispy pastry parcel or fish dumplings in a hot yellow bean sauce. You can then select rice, noodles, vegetables, meats and seafood along with sauces and oils and then head across to the barbeque where the grill chef will cook everything and serve steaming hot. The adventurous will love trying out ostrich, kangaroo, zebra and springbok meat and if there's place for dessert, the white chocolate cheesecake will do very well indeed.

Merchants has a long-standing reputation for various forms of catering in Scotland; its handsome and well-respected restaurant at the very heart of Edinburgh Old Town is an important part of the empire. Emphasis is on Scottish ingredients and dishes, but by no means excluding a wider spread on the daily changing menu. An attractively arranged wheel of Angus beef (and when we were there the beef gave every evidence of having been treated properly prior to cooking) comes well-dressed with an Arran mustard coat, or a filo pastry generously filled with guinea fowl and black grapes, and some very good soups all appear regularly amongst the starters. Main courses are comfortable rather than exciting and may include a fillet of Angus beef on a bed of haggis and glazed with a whisky sauce, crown of quail filled with an orange stuffing, served with a smoked bacon and mushroom sauce, or a pan-fried fillet of trout with an anchovy and Provencale sauce. Service can be a touch patchy but when it's on form it's very good, and the overall quality of the operation is never in doubt.

The execution is simple and the presentation, fantastic, so naturally the overall experience becomes something that you cherish and come to savour.

From the á la carte, choose beer battered tiger prawns with a sweet chilli sauce and wasabi or something from the small plates selection which includes chorizo sausage pan fried in chilli and red wine. Amongst main courses, the steak, ale and mushroom pie vies for attention alongside a rib eye steak with peppercorn sauce and chips and the chocolate brownie with vanilla ice cream and raspberry compote qualifies for an exceedingly rich dessert. The drinks list has contemporary and classic wines and champagnes which meet all requirements suitably.

On reflection I think the menu is a touch daring, the sort of place where haggis towers, which sounds rather like a new development in the classier end of Edinburgh, are the norm, oysters, and smoked salmon vie with a medley of Scottish smoked fish dressed with horseradish cream.

Main courses offer a 10 oz Aberdeen Angus sirloin steak, grilled and served with your choice of sauce, roast Orkney rack of lamb, or a grilled Scottish lobster salad served in its shell with lemon and garlic mayonnaise.

All this excellent eating is done against a background of a short wine list and a very long cocktail list which collectively should ensure that even the slightest list to port or starboard goes entirely unnoticed. Cruz makes a welcome addition to the rapidly developing area of Leith.
