The restaurant is located at a permanent berth immediately behind the Archbishop's Palace and within a few minutes walk from the town centre. The design provides an experience of free-floating above the water and features dining seats with views of Maidstone, and probably Kent on a good day. The inside features an Art deco nautical interior and in good weather the oak French doors are opened on to the quayside offering alfresco dining experience.

Start your meal with confit and home smoked duck terrine, served with chutney and toasted country bread, and watercress soup with crème fraîche and butter fried croutons. Main course can consist of braised pork belly, apple sauce, roasted shallot jam, fondant potatoes and crackling, or onion and goats' cheese tart tatin, served with summer vegetables and herb sauce. End this delightful meal with white wine poached pear, bitter orange confit, and hazel nut ice cream and sauce.

Lunch or dinner here could include hearty steaks or catch-of-the-day specials. There is also a range of nibbles, sandwiches, starters and classic mains from which to choose. Deep fried coconut prawns with a sweet chilli dip or country pork pâté with tomato chutney, herb salad and Melba toast could flag off the meal nicely. Then proceed with griddled steak with oven roasted tomato, field mushroom and chips or pan fried fillet of sea bass on sauté potatoes, courgettes and cherry tomatoes. You might also like to consider Cantonese stir fry vegetables and noodles with prawn crackers and soy sauce or spicy chicken vindaloo with rice. Proprietors Paul Smith, Kevin James and chef Richard Phillips have carefully nurtured the dining experience by renovating this building to provide an atmosphere of warm elegance. A stately entrance welcomes guests and is complemented by the cosy intimacy of the main dining hall and the charm of the individual private dining areas - the crystal room and the Japanese room.

Chicken liver parfait with cured ham accompanied by homemade piccalilli, marinated celeriac with grain mustard, grilled garlic ciabatta followed by a roast rump of new season 'Romney Marsh' lamb are good picks among the starters and the mains. A sticky toffee pudding or an apple tart could help finish the meal. The wine list contains a selection of both old and new World wines.

Apparently there are also plenty of spooky ghost stories to entertain you.

They offer an a la carte menu prepared from fresh local produce. The menu includes traditional favourites such as beef Wellington and sausage and mustard mash, they are also well known for their famous Ringlestone pies; they also have a selection of vegetarian options and a children's menu with healthy choices.

They feature a large selection of over thirty English fruit wines with flavours from apple and apricot to sloe and strawberry, they also stock a selection of liqueurs with chocolate a firm favourite.

You can dine in the older pub areas, the restaurant or the extensive landscaped gardens, which also feature a waterfall and fish pond and children's play area with climbing frame.
