Sourcing primarily local English ingredients, executive chef Hrvoje Loncarevic has put together an imaginative and creative menu. Dine at leisure on specialities such as poached langoustine and fresh water crayfish tortellini, fine herb and pistachio rolled local goat's cheese, loin of Ditchling pork wrapped in Parma ham and butter poached line caught Atlantic turbot. There are options of chicken liver pâté, fillet of sea bream with smoked salmon pancake and breast of pheasant with red wine poached pears too. The eight-course tasting menu reflects the restaurant's culinary style with dishes of pan fried diver-caught scallops, carpaccio of aged English beef and foie gras with spring truffles and bitter chocolate fondant.
