A roulade of salmon and trout served with a salad and cucumber and yoghourt dressing, followed by a cutlet of pork served on a bed of apple and sultana compote with a Calvados sauce, brought to a pleasing conclusion with a delicious summer pudding, naughtily accompanied by clotted cream, should be sufficient to ensure that you consider staying to admire that view the following morning.

This AA Rosette awarded restaurant is a cosy and elegant place for dining with its delicious modern British cuisine and classically beautiful interior. Regularly changing menus include seasonal favourites and Welsh produce and every Thursday there's a themed menu where Italian, Chinese and Thai are often featured.

For breakfast, there's smoked haddock and dill scrambled egg and on Sundays  a traditional lunch with starters of duck liver pate, main course of grilled cod and desserts such as mixed fruit crumble with ice cream bring added pleasure to the weekend. On other days dinner could begin with a terrine of smoked chicken with avocado and mushrooms followed by roasted fillet of pork with celeriac puree and ending with a strawberry parfait with black pepper sorbet. The wine list is extensive and complements the menu perfectly.

Order a Cardigan Bay crab profiteroles with chili ginger oyster dressing and crisp fried pak choi to begin your gastronomic journey. For main course consider slow roasted spiced belly port in spinach and cambozola puree with apple, mango and raisin chutney, sablee scallop potatoes and seared courgettes and fresh fish from the quay and seafood from Cardigan Bay. For those of you with a sweet tooth you could try toffee melon meringue cream with mango coulis hot bread pudding and chilled chocolate and ginger torte with orange and grand Marnier sauce.

The three star Georgian mansion house is situated in glorious parkland surrounded by woods and you could spend time fishing, swimming, walking, or cycling in the countryside. There are beautiful views from the windows across the lawns to the woods. Rabbits play on the grass, buzzards circle overhead and kingfishers and otters can be seen at the river's edge.

The restaurant makes use of fresh local produce to create dishes such as chicken liver pâté with redcurrant and port sauce; ham with melon balls and cottage cheese; River Teifi salmon with a prawn and cream sauce, and Thai spiced chicken breast char-grilled with yoghurt, cucumber and coriander, all accompanied by a selection of fresh vegetables and potatoes.

To finish, pavlova filled with white caramel sauce and surrounded by a chocolate coronet could catch the eye. Fifty wines make up an intelligent list.

Another of those beautiful conversions from farm to hotel and restaurant which seem to have become a bit of a feature in Wales as farming adapts. Miles and Jacky Glossop have done a fine job and the eating arrangements have obviously featured highly on their priorities.

The wonderfully flavoured products of the locality are noticeable by their presence, including smoked salmon from the Black Mountains and Pantysgawen goat's cheese, with the emphasis on honest-to-goodness country cooking. Penbontbren is rural Wales at its most compelling.
