The Wellington Hotel is a lovingly restored 16th century coaching inn in North Cornwall, and with a prominent guest list that includes His Majesty King Edward VII and Sir Henry Irving, their celebrated West Country hospitality is as impeccable as their guests. With a 2 AA Rosette the food at the Waterloo Restaurant certainly raises expectations and seldom disappoints.

Seared calf's liver with crispy potato cake and shallots, and confit duck egg with roast asparagus, poached duck breast and yogurt dressing may appeal amongst starters, closely followed by seared fillet steak with violette mash, Boscastle spinach and wild mushroom jus, and aubergine Kiev with courgettes and black olive velouté. A citrus dessert of lemon posset with lemon twiglets, blood orange jelly and lime curd ice cream bring in the invigorating flavours of lime and orange on to a plate.
