To imagine that Mrs Huelin might have her own website is rather akin to believing that Saddam Hussein might have had a promising career as a social worker before he took to other more lethal employment. The Huelin family, who head up this new take on running a restaurant, have simpler views on communications and prefer to concentrate on the practical comforts of their guests as they take their seats at tables in her back garden and the living room that was. A crab sandwich will cost you less than £3, a lobster feast around £25. There are plenty of other maritime options and the overriding impression is of fish with totally retained freshness, probably like you have never known it before.

Customers are asked to bring their own wine and bread. Everything is prepared on the spot whilst the client waits - the price for this may be a slightly longer timelag but it's worth every second. This is probably the humblest location offering the best food in Britain - any counter-claims to this website please, for further investigation.

There is a retail seafood business running in harness with the restaurant, and the Huelins also have a seafood van that tours the local residential sites and homes. Which is fine, but what you will remember most is sitting in Mrs Huelin's garden eating the freshest, juiciest lobster of your life whilst everyday events go on around you, the décor matters not one jot, the service is the friendliest you've ever known, and certain sense of perspective takes over as you wonder whether you might pop in for breakfast next day when kippers and crab on toast are on the menu.

Head Chef Darren Smith exhibits his passion for food in his scintillating cooking and the focus is clearly on locally sourced produce. The menu features starters such as lightly spiced crab, prawn and lemongrass tartlet and pork tenderloin en croûte filled with apricot and walnut stuffing. To follow on the same inspirational lines, prime fillet of steak with a chorizo and sun-dried tomato sauce crushed on new potatoes and confit of duck leg appear amongst the main courses. Baileys and chocolate mousse with vanilla tuile biscuits is an excellent way to finish.

Trimstone Manor Country House Hotel also offers a beautiful collection of bedrooms and suites, a courtyard and extensive gardens where you can relax with a glass of wine.

Dishes are prepared from a good mix of local ingredients and quality additions bought from further afield and are generally traditional in origin, with an imaginative flair always visible. The seafood restaurant has an interesting and varied menu focusing on fresh seafood and fine local organic ingredients, the large selection of specials changes daily.

Menus could include starters like langoustine bisque laced with cream and brandy; salad nicoise with fresh tuna, tomato, green beans, olives and flat-leaf parsley; sautéed tiger prawns with garlic and herb butter, with pots of mussels by the kilo or half kilo.

With main courses such as Japanese seafood pot with udon noodles and nori; monkfish wrapped in Parma ham with sweet peppers, tomato, garlic and saffron sauce; half boiled Mortehoe lobster with fresh mayonnaise; grilled sea bass with fennel, orange, black olives and basil. For real gluttons they offer a wonderful 'Plateau de Fruits de Mer', and for carnivores there are non-fish dishes as well.

Puddings are a speciality, with choices like vanilla crème brûlée with honey roasted figs; caramelised lemon tart with raspberry sauce and fresh fruits or rich chocolate truffle torte with hot chocolate sauce and toffee shards.

Westbeach bar serves a selection of fresh juices, coffees, cocktails and wines from an extensive list. They are open until 1am at weekends (every night during the summer).
