Without being over-dramatic it is probably fair to say that what is happening at this quay, where barrels of Claret and Sauternes used to be unloaded after their journey from the vineyards of Aquitaine, is one of the most exciting developments in our attitude towards the food and drink we consume.

Founded by Barny Haughton, one of the unsung heroes of the organic movement, and John Pontin, OBE, a property developer and advocate of environmental thinking, the idea is to make the whole complex environmentally sustainable.

A restaurant and a brasserie are important parts of the enterprise, which also contains a bar, deli, bakery and cookery school.

Both spaces make the best use of natural lighting and ventilation, with natural materials used throughout. The menu in the restaurant changes daily and an autumn menu would include cep and mushroom soup, rump of summer lamb with tomato and spinach tart, roast summer squash and basil, followed by lemon, almond and polenta cake with marscapone.

In the brasserie fare could range from huevos a la Flamenca for breakfast, Provencale fish soup with rouille croutons and gruyere for lunch, and steak tartar for dinner.

Amongst the fascinating range of beers, lagers and ciders is Old Rosie, from Westons, weighing in at 7.3%. As I write someone is telling me he drank six pints of the stuff before realising he was unable to mount his bicycle - frankly I don't believe him.

The Dower House

If it was possible for an urban hotel with country leanings to select its own classic location it is hardly likely that anywhere more handsome than The Royal Crescent at Bath would come into consideration. Furthermore the von Essen Group have also had the good fortune to acquire the two central buildings of this most impressive architectural achievement by John Wood the Younger.

Half close your eyes and for those with a fertile imagination it should be possible to envisage the high society of Beau Brummel's day promenading their way along the Crescent, and it is this spirit of gentility and grace that has been invoked within the hotel.

At Pimpernel's Restaurant, located in the Dower House overlooking the magical gardens that run out behind the hotel's classical façade, the Head Chef, Steven Blake and his accomplished team offer a contemporary British menu, with more than a passing nod to the Mediterranean and the Far East. The result is modern classical dishes presented in tandem with a more traditional cuisine.

So amongst the starters we find traditional oak smoked Scottish salmon with capers, horseradish cream, shallots and freshly carved Caraway bread, or a minestrone of mussels, bacon dumplings and fine noodles, though many find the duo of tuna, cous cous, white radish remoulade and bloody mary with garlic cream completely irresistible.

Steven Blake has been heard to remark that "my personal preferences are less important than what our diners have to say", a comment that all 'celebrity' chefs should have firmly inscribed on their kitchen walls. Free-range chicken, the only sort that anyone in their right minds should even think about eating nowadays, comes roasted in pancetta, with spring vegetables and wilted red chard.

For the lovers of seafood there is tranche of halibut, salsa of crab, clams and chorizo with pea froth, or baked seabass with creamed butter beans, ceps and a Madeira jus. For me, perhaps the beef fillet with creamed leeks and a Cabernet Sauvignon shallot jus.

And so to the finishing straight, with a lavender crème caramel and honeycomb ice cream, an assiette of desserts, or a whole baked Camembert with rosemary and garlic. Connoisseurs of true comfort food will rejoice to see redcurrant baked Alaska with marinated grapefruit and grenadine thyme soup.

For a light lunch try the chargrilled asparagus and Parmesan shavings before a pudding of the truly delicious Royal Crescent fruit salad for a modest £16.

Wine is taken as seriously as any other department at The Royal Crescent and delightful combinations of menu dishes and accompanying wines are offered by the Sommelier and his staff, who will take your knowledge on wines, and food to go with them, in their stride. Requests for advice are dealt with cheerfully and capably.

The Royal Crescent is particularly well equipped when it comes to private dining for as many as 40 or as few as 10. A champagne cruise aboard the Lady Sophina will start the evening in style before going on to the discreet luxury of The Pavilion Conservatory where up to 8 people can dine comfortably.

Gourmet Burger Kitchen was the brainchild of three New Zealanders, who craved after the way that food tasted back home. The chain was instrumental in changing the perception of many people who saw the traditional burger purely as a fast food option; instead they are now seen as more sophisticated products, made using fresh, good quality ingredients.

Their first outlet opened in Battersea and today there are forty-one serving scrumptious burgers. Chef Peter Gordon believes in using innovative combinations, with good quality English chicken and Aberdeen Angus Scotch beef among the ingredients, to make nutritious and convenient to eat fare. They offer chorizo and sweet potato, lamb and minted relish, or the vegetarian portabella mushroom among others. GBK sauces and accompaniments add to their taste.

The menu has nearly thirty different choices and if you feel like biting into pure beef, do try their classic burger with salad and relish - available with or without cheese, this is served with sauces like smoked mayo, spicy satay, fresh chilli and Thai red curry, lending the meal varying degrees of spice.

Some, like the Kiwi, are made using unusual raw materials such as beetroot, fried egg and pineapple, while for fans of chicken, the grilled breast with streaky bacon, salad and avocado is a delicious combination. There are a surprising number of burgers suitable for vegetarians with versions made from puy lentils, potato, green curry or aubergine served with goats' cheese and sun blushed tomatoes. Fresh fruit juices, soft drinks and milkshakes are alcohol free options.

A welcome list of wines and beers complete the picture of a relaxed and modern environment as Gourmet Burger King excels in making the humble burger taste so good.

Olive Tree Restaurant

Privately owned by Laurence and Helen Beere, the celebrated Olive Tree Restaurant has gained a reputation in its own right for the finest modern British cuisine in a relaxed and friendly environment.

Menus are an eclectic combination of modern English flavours and Mediterranean influences.

Occupying a basement - in fact, three basements under neighbouring houses, whose floor levels step down, following the road's incline.

The Olive Tree has recently been fully refurbished to create a sophisticated and contemporary atmosphere whilst still retaining the warmth and friendliness of the personal and attentive service offered by the experienced restaurant team.

The restaurant was described by one critic as being "stylish, without being pretentious, and discreet lighting adds to the light and airy feeling" Mark Taylor, 15th May 2004.

Lunch time menus offer diners the choice of a set two or three course lunch from £13.50. However the restaurant is popular with local business people and shoppers for its simple a la carte menu at lunch where many of the dishes are priced as starters or main courses offering guests the choice of just one course should they be in a hurry through to a more relaxed and complete meal.

The evening menu offers a set menu at £26.50 as well as a full a la carte. The cooking of Jason Horn, Head Chef for the past four years is a creative blend of modern British cuisine with some Mediterranean influence.

Dishes include starters of slow cooked tenderloin of pork and black pudding salad as well risotto of leeks and Cornish blue cheese, whilst main courses include Roast Monkfish with buttered spinach and cep jus and seared scallops on parsnip puree with crisp speck.

Desserts are enough to tempt a saint into sinning with choices like: chocolate and banana tart, rum and raisin ice cream; lemon mousse, sable biscuits, vanilla poached raspberries; warm sticky toffee apple pudding, apple sorbet or baked rhubarb with oranges and port, ginger sabayon.

The Olive Tree wine list offers guests an extensive collection of interesting wines from some of the top suppliers in the UK. Reflecting the close working relationship with these suppliers the main list includes a special suppliers collection.

This listing changes on a monthly basis and allows them the opportunity to bring interesting and varied wines to their guests for them to try.

Voted Best Restaurant in Bath 2003 The Olive Tree is one of the West Country's great culinary experiences.

Set in a unique 12th century Priory which has retained all the original architectural features, The Moody Goose Restaurant combines all the charm of the old with the experience of an award winning team. Innovation characterises the kitchen with a strong emphasis on seasonality.

There is no doubt that Stephen Shore, chef and co-owner with his partner, Jennifer Laws, are a highly accomplished chef and front of house team. Choices could include: salad of Cornish lobster, green beans and truffle oil with potato and quails' eggs; cannelloni of confit wild rabbit with roasted apple and herb broth; seared tuna and lemon sole roulade with a tomato and basil sorbet and those are just to begin with.

Why not follow with pan fried calf's liver with roasted avocado and pink grapefruit or roasted rump of lamb with a pine kernel crust, parmesan tuille and ratatouille and to finish, a tian of English raspberries, caramel discs and mascarpone with a raspberry sorbet? Splendid preparation and a fine atmosphere have ensured that this establishment features in many guides. Set menus at lunch represent excellent value considering the quality of what is on offer.
