In 1882 the Carroll Villa Hotel was originally built akin to an Italian villa as a seaside getaway for families. Years later, pioneering the way to a greener future, the in-house Mad Batter restaurant's interior is now all about corn carpets, earthy American clay ceiling and bar countertop made out of recycled glass, shell and concrete.

Once you've admired these lovely fixtures, settle down for a clam chowder, a rich blend of chopped clams, onions and bacon in a heavy cream broth with a touch of saffron, or perhaps a rustic pizza blanketed with caramelized onion, Portobello mushroom, garlic and rosemary, finished with a little Asiago. An orange lavender roasted chicken could join you next, marinated and roasted with natural jus, it sits prettily on a bed of sweet potato wedges and haricot verts, or you could even try the herb basted grilled lamb loin chop.
