The kitchen brings an innovative dining experience with a delightful à la carte menu. For instance, you may not be surprised to find seafood bisque soup, traditional chilled shrimp over field greens with spicy cocktail sauce, and sesame chicken among the starters. Main courses are along the same lines, with an excellent selection, ranging from tilapia francese - fresh fillet dipped in an egg and cheese batter, through to 14 oz New York strip served with parmesan Italian toast. Ribbon pasta tossed in a sour and heavy cream, cheese, and white pepper sauce is one among the many delicacies that brings the crowds in.

A large and comfortable diner located in Kingston, Rosita's restaurant is situated on the waterfront, overlooking the Rondout Creek and Hudson River. It serves a wide range of international cuisine focussing mostly on Mexican food and is a favourite haunt for the locals either for large gatherings and parties or smaller get-togethers. The food features traditional Mexican classics of seafood that is fresh together with other non-vegetarian fare.
