Vaults, The Description
The Vaults is best described as a stylish restaurant and suave lounge bar that would make the appellation 'chic' a more fitting one. Situated in the Jewellery Quarter, the interior alone merits a visit, embellished with polished wooden flooring, bespoke furniture and a dusky autumnal colour palette; the arched alcoves bring in a more intimate feel.
Head Chef Sean Kyle's impressive pedigree includes a stint at Le Manoir aux Quat'Saisons, and now his culinary creations at The Vault have many diners coming back for more. To prove the point there are starters of confit of chicken terrine and salmon and ginger tartlet with caper and shallot dressing. After tackling these there are some delightful main courses to follow, honey glazed pork belly, roast pave of cod, and duo of lamb with vegetables, lentils and white onion puree.
