Wellington, The Description

Located in the heart of the beautiful Herefordshire countryside and named after the little village it nestles in, The Wellington was bought by PR director turned chef Ross Williams in the summer of 2002 with a vision to transform it into one of the county's finest dining pubs.

Today Ross is a happy man and his award-winning rural retreat is much loved for its great modern British food and rustic atmosphere. You could sit by the open fire and relax over a pint of real ale or head to the restaurant and enjoy a meal from daily changing lunch and dinner menus.

Highlights could include pan-fried duck livers in brandy and pink peppercorn sauce with brioche toast, followed by fillet of sea bream with fresh samphire, new potatoes, roast summer garlic and thyme oil or pan-roasted saddle of local venison with a beetroot, goats' cheese and rosemary gratin, and redcurrant sauce.

Desserts span everything from blueberry crème brûlée to baked white chocolate, lemon and black pepper cheesecake with Court Farm strawberries.
