White Room at Seaham Hall, The Description
In 1815, Lord Byron was married to Anabella Milbank at Seaham Hall. Whether or not this piece of information is likely to enhance your appetite is perhaps questionable, but certainly, the standards now set following the conversion of this former stately pile are commendable. Little has been lost and a lot, like a Michelin star and three AA rosettes, gained in the process.
History does not relate the details of the wedding feast but it seems likely that Byron would have approved. Perhaps a mosaic of rabbit with celeriac cider and apple caramel, followed by caramelised Goosnargh duck breast, braised fennel, fig puree and foie gras red wine sauce, culminating in a chocolate fondant with chocolate sorbet for the more robust? Whilst by the standards of the day this might have seemed a little light on variety Byron probably had other things on his mind.
As for the splendid wine list there is little doubt that Byron could have been seriously challenged, resulting even in delayed consummation. House wine from £20.

I was lucky enough to be surprised on my birthday last year (2005) and also this year with an overnight stay at Seaham Hall, and wow what an experience! Last years visit was sensational in every way but the food in both the Ozone restaurant and in the White Room were out of this world. The staff have an amazing ability to know exactly how much attention to give each guest, always addressing you by your name, which I thought was a nice personal touch. The wine waiter also took the time to help me select a suitable wine for our evening meal. This year’s visit was everything I expected and more as the staff remembered us from last year!! On a final note I suppose I should mention the food. At Seaham Hall you get what you pay for and it is expensive but what you get is mouth-wateringly fantastic, well thought out and beautifully presented. The whole atmosphere is completely unpretentious and relaxed. After dinner retire to the lounge for coffee and sink into the comfy chairs and chill. Mmm just writing about it makes me want to go back.

Seaham Hall is one of the best places to eat in the north-east. The food in the restaurant is exceptional, as are the surroundings. The service is fantastic, the staff are both professional and welcoming. The lunch menu offers tremendous value; after spending a few hours over a leisurely meal there I feel like I've been on holiday for a few days! The food in the Serenity Spa restaurant is also extremely good, quite different in style and feel, but good value and excellent quality. Enjoy!!
